I have ruined quite a few batches of cookies trying to get this right! But I think I have finally come up with a "base" recipe for cookies that the kids will eat.
I use Trader Joe's Stevia extract in the little bottle.
I use Trader Joe's vanilla - no alcohol
Ingredients:
2 cups almond flour
1/4 tsp salt
1/4 tsp baking soda
8 TBSP melted butter (or 1/2 cup olive oil)
1 tsp Stevia
2 eggs
1 TBSP vanilla
Preparation:
1. Preheat oven to 350 degrees F
2. Combine all ingredients and mix well
3. Place spoonful of batter on greased cookie sheet
4. Bake for 12-15 minutes until fork or tooth pick is clean
VARIATIONS:
1. Add 1 cup unsweetened chocolate chips (yummy! Best one!)
2. Add 1 TBSP cinnamon
3. Add 1 TBSP unsweetened cocoa powder
4. Any variation of the above!
I was diagnosed with fibromyalgia, diabetes, chronic fatigue, arthritis, Lupus Anti-coagulating disorder, weight gain, low Vitamin D levels, sleep apnea, restless leg syndrome, lactose intolerance, gluten sensitivity,panic attacks, ADD and depression. Have you made these without the chocolate chips? I am so going to make these tonight!
I made a batch with some melted unsweetened cocoa (into brownies). The basic recipe is fine- just adds more flavor to put in some cinnamon or something like that.
